What would be a good way to clean engine bay? What products? Should I do the dealership way? I as well have blue Ford silicone hoses that are dirty and want them back to original looks, how do I clean silicone hoses?

I have always found simple green to be a very efficient cleaner, STAY AWAY from a dealer.. IMHO all they are going to do is spray off your engine (not caring about any of your electronics) then they will spray the hell out of everything with silicone spray i.e. oily "tire shine" it will look great for 2 days then start collecting every bit of dust/dirt/grime/gradoo you can imagine...
I spray a fine mist of simple green over the engine, allow to sit for 3-5 minutes, take a toothbrush to any tough grime, then LIGHTLY mist off the simple green with water (being careful not to hit any electronics with direct spray... then towel dry... after dry I use Zaino "tire shine" (non silicone containing) on all my rubber parts/unpainted plastics.
